UniProtKB description:  Catalyzes the reversible phosphorolysis of chitobiose (N,N'-diacetylchitobiose or (GlcNAc)(2)) into N-acetyl-alpha-D-glucosamine 1-phosphate (GlcNAc-1-P) and N-acetyl-D-glucosamine (GlcNAc) with inversion of the anomeric configuration (PubMed:13678418). In the synthetic reaction, is also active on glucose-1-phosphate with 10% activity as compared with that on GlcNAc-1-P (PubMed:13678418). GlcNAc is the best acceptor substrate, but the enzyme can use aryl-beta-glycosides of GlcNAc as the acceptor substrate with 10-20% activities of GlcNAc (PubMed:13678418). Shows no phosphorolytic activity on cellobiose (PubMed:13678418).
